The finer things in life take time.  To make brick oven pizza takes a lot 
of time. Only hardwood is used and quite a bit.  Dough is made fresh
 that day,  sauce is made from San Marzano tomatoes , and only fresh
 mozzarella is used.    The fire takes 1 hour to achieve the temperature 
of 600-700 degrees.  Once the pizza is prepared on a wooden peel and 
slid into the oven, its  done in 3-5  minutes.   The pizza comes out 
charred on the edges, bubbling hot in the middle and smells 
unbelievable.  Entertaining family and  friends  is always  a challenge
when it comes to preparing and  cooking pizza in a brick oven.
